Israel’s Hai Cabernet Sauvignon for Purim available at Mr. Bill’s Wine Cellar!

With Purim coming up this weekend, we wanted to remind you that we have a great Israeli Wine available at Mr. Bill’s Wine Cellar!

The opening of the Ella Valley Wineries brought back to the region a wine culture that was thousands of years old, with the help of 21st century tools and skills. The principles underlying the work of the founders of the Winery were to produce excellent wine, relying on the unique qualities and conditions of the area; and for the wine to be kosher, which would enable its dissemination to large publics in Israel and across the world. The Ella Valley Wineries are considered one of the best and most advanced in Israel, with a production of over 200,000 bottles a year, all of which are premium quality wines. Approximately 40 of the production is exported, which is unprecedented in Israel’s wine industry. Dark, well extracted and concentrated, medium/full bodied. Aromas of dark forest fruit, black cherry, cassis, cigar box. Great structure, round and velvety smooth on the palate, beautiful tannins well balanced with excellent length on the finish.–Winemaker Note

Southern Tier’s Iniquity at Mr. Bill’s Wine Cellar

Imperial Black Ale, 9% abv

Iniquity, depravity, sin, wickedness. The opposition to goodnes. Iniquity is an ale as dark as night, hops and malts conceding the victory over conventional standards with this unapologetic black ale. Why do we call it Iniquity? It’s contrary to what one would expect from an IPA. A dark, malty ale with a huge hop profile seeping forward. A blackened ale, the antithesis of Unearthly.

Food Pairings: Particularly tasty when paired with roasted or smoked foods, blackened fish, oysters, steak.

Pietra Santa 2009 Merlot at Mr. Bill’s Wine Cellar

Pietra Santa means SACRED STONE in Italian and was named in honor of our unique soils rich in limestone and shale. Our Pietra Santa Wines are predominantly single varietal, estate-based and made to showcase the marriage between our exceptional terrain and the individual characteristics of each grape.

The winemaker, Alessio Carli firmly believes that their wines are only as good as the grapes that they grow. Special attention is paid at every level to ensure that only the finest grapes are used – from farming with environmentally sustainable methods, intensive pruning and trellising, to careful field cluster selection and hand harvesting. After harvest the grapes are fermented in small tanks and lots are kept separate and aged in hand-selected oak barrels. This allows Alessio to identify the unique characteristics in each block and vintage and artfully craft the ideal blend for bottling.

This is Mr. Bill’s Wine Cellar 3rd Annual fight against Juvenile Diabetes. Each year we donate money for the Juvenile Research Foundation of the Greater Blue Ridge for their annual gala. We hope to top our numbers from 2012 to fund research in helping children that suffer from this horrible disease. To support this cause, all you have to do is purchase Santa Luz wines from Mr. Bill’s Wine Cellar before March 23, 2013. We do not raise the price on these wines…we simply donate a portion of our profits to JDRF.
