Profile: Pinot Noir
- Pinot Noirs are racked by gravity from the fermenters to French oak barrels in the cellar.
- Nitrogen gas is used during racking to gently push the wines from barrels back into tanks.
Adam hand selects only the finest quality French oak barrels for his entire Pinot Noir bottlings – Burgundian coopered, 3-year air-dried, medium toast, tight grained. The delicate flavors and finesse of the Pinot Noir grape depend on this careful handwork.

Elk Cove hand crafts wines from outstanding vineyards in the Northern Willamette Valley of Oregon. Through site selection and meticulous vine management we achieve concentration and depth of flavor in the vineyard.
In the winery we use gravity flow and gentle handling to protect the inherent qualities of the Estate grown fruit.
Family Owned
Elk Cove Vineyards is a family owned and managed winery with 600 acres on four separate vineyard sites. At this time 220 acres of mature vineyards come from our Estate, Windhill, Mount Richmond and newly acquired Five Mountain vineyards. Excellent slopes are available for another 150 acres of vines, which will be planted over the next five years.

The winery’s focus is on Willamette Valley Pinot Noir, Pinot Gris, and Pinot Blanc. Creating powerful yet elegant wines that focus on freshness of fruit, depth and viscosity.
Elk Cove Vineyards has produced Single Vineyard Pinot Noirs since 1979. These flagship wines are available in limited quantities. Windhill, La Bohème, Roosevelt, Mount Richmond and Five Mountain Vineyard Pinot Noirs have all been selected for specific site characteristics – soils, aspect, microclimate. Yields are kept to below two tons per acre for these special reserve bottlings.
